The Thesis for a Candidate Degree in Economics, in speciality 08.00.04 - Economics and Management of Enterprises (according to the types of economic activities). - Zhytomyr National Agroecological University of Ministry of Agrarian Policy of Ukraine, Zhytomyr, 2008.

The thesis investigates the problems of the operation of ice-cream producers at structural markets. The paper determines the essence, sphere and signs of the structuring of the markets, scientifically characterizes the ice-cream market as a self-organized system with a high level of liberalizing interrelationships the structure of which has passed through several evolution stages. The groups of market operators have been singed out by the ownership indicators of milk processing, cooling and marketing capacities as a trademark or a distribution network, and the key directions of the development strategy for each group of enterprises have been determined.

The thesis also deals with the essence of factors determining a high level of ice-cream market concentration. The causes of deepening the specialization of marketing agents and the incentives to their integration have been revealed.

It has been established that the low quality of raw materials is both one of the most important restrictions on the development of ice-cream producers and a barrier for the entering foreign markets. The author shows the mechanism of decreasing the indicators of power intensity and capital coefficient, total production and marketing expenditures per unit of product sale when introducing the concentric diversification which makes it possible to smooth seasonal fluctuations in raw materials amount and the demand for finished products. The paper substantives the necessity and shows the organizational principles of creating the national system of ice-cream quality monitoring.
